Best Chocolate For Making Infused Microwave fudge

You can use any chocolate chips, but semisweet chocolate chips are the best. Because the sweetened condensed milk has a large amount of sugar, the semisweet chocolate balances out the flavor. As for brands, most are fine for making cannabis fudge but read the ingredients on the package. If you see flour, it is a sign of poor quality and will no longer be gluten free.

Using Cannabutter to Make Cannabis Fudge

Always make sure you decarboxylate cannabis before making edibles. Please visit the Edibles Tools page for more information. You can use either regular cannabutter or quick cannabutter for making cannabis chocolate fudge.

Dosing Cannabis Fudge

In order to achieve consistent dosing, make sure that your pieces are equal sizes. If you know how much THC is in your cannabutter, simple divide that number by the number of servings to get the dosage per piece.

If you grow your own flower and make your own cannabutter, a few more calculations are required.

How many grams of dried flower are you using in your batch? Multiply that number by 1000. Next, multiply that number by the percentage of THC in your strain. Then, multiply that number by .88 for the conversion of THCA to THC. Finally, divide this number by the number of servings. Here is an example:

Bob used 7 grams of White Widow with 20% THC to make half a cup of cannabutter. He then used half of the cannabutter to make his fudge that he cut into 24 equal sized pieces.

Half a cup of cannabutter yields: 7 x 1000 = 7000 mg x .20 (THC) x .88 (Convert to THC) = 1232 mg THC

Bob used 1/4 cup to make his fudge, so 616 mg THC gets divided into 24 piecces, making each piece 26 mg THC

FAQs

How long should I beat my fudge? ›

until it starts to crystallize. If you beat it by hand with a wooden spoon, crystallization can take between 5 to 15 minutes. The process is much faster with an electric mixer, just 2 to 3 minutes. The mixture is ready to be poured into a pan when it has visibly thickened and lost a bit of its luster.

Why does fudge need to cool for such a long time? ›

A supersaturated solution is highly unstable, and any agitation will cause crystallization to occur throughout the solution. If fudge is stirred while it's still hot, fewer crystals form, and they grow larger as the syrup cools, resulting in a coarse, grainy candy.

What is the use of Cannabutter? ›

Cannabutter is made from butter and cannabis. It's primarily used to make edible cannabis products like baked goods and candies. These may help relieve cancer-related symptoms and improve sleep. However, cannabutter may contain inconsistent concentrations of THC, making it easy to overconsume.

Combine the sugar, milk, butter and salt. Boil for 5 minutes, stirring constantly. Add the chocolate and stir until melted. Remove from heat and stir in vanilla, nuts and marshmallows until melted; mix well.

What happens if you over stir fudge? ›

Once the sugar has dissolved and the mixture has come to a boil, do not stir it. If you do, the sugar can crystallize, giving your fudge a gritty texture. As you beat the fudge, pay attention to color and texture. Once the fudge loses its sheen and thickens, put down your spoon.

Should I stir fudge while boiling? ›

Stir the ingredients to dissolve the sugar until the mixture comes to a boil. If your recipe uses milk, stirring will keep the mixture from curdling. But once it reaches about 236–238 degrees F/113–114 degrees C (the "soft-ball" stage), do not stir it or even shake the pan.

When should you not make fudge? ›

Humidity can cause fudge to boil over in the pan or stay soft when set, so try to avoid working on humid days if at all possible. If waiting for a less humid day isn't feasible, you'll need to boil your fudge at a slightly higher temperature than usual — or just order some delicious fudge from Wockenfuss!

Why shouldn t you stir fudge after it reaches the correct temperature? ›

Without stirring or agitating the pot, allow the fudge to cool to 130°F (54°C)—or even lower! Harold McGee says that “candy texture is affected by the syrup temperature at which crystallization begins,” and this is the temperature where the seeds can form correctly.

Why can't you refrigerate fudge? ›

Fudge is best stored at room temperature for 2 to 3 weeks wrapped up in its original wax paper. NEVER REFRIGERATE your fudge as this will draw out the moisture and leave you with dry, crumbly fudge.

Can I fix fudge that didn't set? ›

To fix it, you can reheat the fudge mixture over low heat and continue cooking until it reaches the proper temperature. Be sure to use a candy thermometer to monitor the temperature accurately. Alternatively, you can try to salvage chewy fudge by mixing it into ice cream or using it as a topping for desserts.

I prefer to use ghee to make my canna-butter, which is full-fat butter, without any milk solids, and the best brands are made by a simmering process which gives it a lovely slightly nutty flavor. The fats absorb the power of cannabis in a beautiful way!

What gives fudge its firm texture? ›

Tiny microcrystals in fudge are what give it its firm texture. The crystals are small enough, however, that they don't feel grainy on your tongue, but smooth. While you ultimately want crystals to form, it's important that they don't form too early.
