Not sure what you mean by "fresh ginger beer." Homemade? If so, a link to a recipe would be helpful. Or if store-bought bottled is okay, can you please suggest some brands?

I added a tablespoon of black strap molasses to my salty lime cordial to give it a little bit more depth and I HIGHLY recommend it if you like the sweet, dark, round taste of rum and have a really spicy ginger ale that can stand up to the flavor.

I used Double Bergamot from Stash tea and Fever Tree Ginger Beer. Augmented the fresh lime juice with bottled key lime juice to get to full 1.25 cups for the cordial. A full 24 hrs yielded a well-spiced sour but sweet cordial. I miss an alcoholic Dark and Stormy but this has the bite/bitter/sweet balance of the real thing. Delicious!

Perhaps the "fresh" refers to the ginger. Reeds ginger ale has fresh ginger.

I’ve made this a few ways after trying it as directed in the recipe. I agree the ginger beer was too sweet for me. I really liked it with double the tea and no additional ginger beer, and I liked it more with a lime seltzer in place of the ginger beer. Going to try it with the Ginger Lab (might be local to the Bay Area) ginger beer which is SUPER spicy and not at all sweet. Maybe 1-2oz is all that’s needed, topped w the lime seltzer. I also think a squeeze of fresh lime is necessary to finish!

About the tea: Be careful of oversteeping Darjeeling tea—it gets astringent quickly. I wonder if a blend with Lapsang would add nice smokiness and depth. About the ginger beer: Fevertree brand is really nice; it’s my go-to.

I can see how some people would find this too sweet, but I like it as is. I don’t miss the rum at all. It would be nice to get an updated serving size on this, because it makes A LOT of cordial. I’m going to try freezing some of it.

Doubled the recipe to serve 8 people but I kept the sugar at 1 cup. I also halved the ginger beer with lime club soda and felt like this was the perfect amount of sweetness (agree with others that you really need a punchy ginger beer for this recipe - I used Reed’s extra). If you have it on hand, freshly zested ginger and ground cardamom really took this to the next level. Added cardamom bitters as well. It was a big hit and no one missed the alcohol. Will keep in my mocktail rotation!

Reeds ginger beer for the win, and we made x3 of the lime cordial to make a pitcher for company. Sweet/salt/sour for the win. Might grate fresh ginger into the cordial next time cause the ginger beer gets a tiny bit lost. Other ginger beers would have made this too sweet for sure.

Maine Root ginger beer - intense flavor with bits of ginger maintains ginger flavor despite dilution in this and many co*cktails. Available nationally at Whole Foods and in regular groceries in New England.

I also found this mocktail far too sweet with the ginger beer. And I think the ginger beer overpowers the lime cordial and tea somewhat. Simply subbing in sparkling water for the ginger beer yielded great results! Give it a try.

Made this and loved it. 2 changes. 1. Reduced the sugar to 150 g (3/4 c). 2. Substituted 2 oz rum for 2 oz lime juice because my 6 limes only made 1 c of juice. Maybe would switch some of the white sugar over to brown sugar next time?

A good Ginger Beer is Gosling’s diet. It is very spicy and ginger forward, plus I like the diet option because regular is way to sweet for me.

I halved the sugar and subbed a few dashes of all spice for the cloves. It was spectacularly good! Complex, zesty, tangy. We loved it! As good as any mocktail you’d get at a fancy restaurant. Great alternative to serve guests. Next time I’ll make a bigger batch just to have at home.

I used a spicy Caribbean-style ginger beer, and along with the syrup, it made the finished drink far too sweet for my taste. I then tried adding fresh grated ginger in the cordial base, and subbed seltzer for the ginger beer - this was a far better option in my opinion. Probably the best way to do it would be to brew your own ginger beer, and let it ferment until most of the sugar is converted, but then it wouldn't be a mocktail!

This absolutely slaps. A bit spicy… I used black tea instead of Darjeeling because that’s what I had on hand. Definitely try this!!! Love Rebekka’s drink recipes!

Could one substitute cold CHAI for both the tea & cordial AND, simple add ginger beer & limeOR, brew CHAI tea with ginger, add soda water & lime wedge, plus sugar to taste
